The last couple of days my mind was somewhere 10,000 miles away.

I have been arranging our schedule for our trip to the Philippines. I was hoping that we would have enough time to see more people and places. I was wrong. At this early stage, our family and friends are "booking" for slots to fit into our schedule.
One thing is for sure, hubby and I will have a week completely to ourselves--just laze around the beach, enjoy the sun and sea, snorkel and dive, have a nice massage, catch up on our readings and think of absolutely NOTHING! It is now my turn to plan for our first wedding anniversary celebration so I want to make it extra special. Last January, it was hubby who planned for our honeymoon because he wanted to surprise me. I like surprises so I readily agreed. I didn't have a single clue where we were going until we reached the check-in counter.

I am also looking forward to December. We will be having guests for three consecutive weeks before we leave for our vacation. My friend from San Francisco, a cousin and friend from Boston and my husband's brother and his family from the UK are all visiting one after the other. It surely will be busy but having family and friends over will definitely keep the Christmas spirit.
Oh, I am already craving (and dreaming) for what or where to eat in the Philippines--my mom's sinigang, mom's calderetta, mom's nilagang baka, mom's kare-kare with bagoong, bulalo in Batangas, pansit palabok, fresh lumpia, pinakbet, halo-halo, longganisa, tocino, tapsilog, paksiw na lechon, sisig, garlic rice, Sugi, Casa Armas, Via Mare's bibingka and puto bumbong, they oyster bar, Max spring chicken, Shakey's thin crust pizza, discover new restaurants, fish balls, fresh tilapia with salted eggs and tomatoes, grilled fish with salted eggs and tomatoes, grilled squid with salted eggs and tomatoes...For some reason, I miss salted eggs and I can't get it here!
The best thing about the vacation is that I (or hubby) don't have to lift a single finger to cook.
In five weeks time, I will be seeing the sun, feeling the warm weather perhaps even perspiring. Yes, I will be home again and the mere thought of it keeps me going.

the other month when i was in pinas, i brought with me salted eggs! i stocked a few but they are all gone now :-(

Anyway, I envy your going to the Philippines. I'm so glad for you. Of course the food you've mentioned are all part of the trip. When I went there last year, I had "ndulgence"in my mind. It was when my friends took me out that I found out hinko ko rin pala kaya..how can you fit all those mouthwatering delicacies in 2 weeks..
Anyway, it will be my family's turn next year..going for a 50th wedding anniv and clan reunion..I was also able to arrange for a month's worth of holiday from my boss. I want to see Bohol while it's still young..or probably Boracay..You have fun and magbalita ka ha.
MissT: Yes, i'll be home too. I always make it a point to spend part of the winter in the Philippines. Good for the mental health ;-) Hope you enjoy your trip as well. Oo nga, I can take some red eggs (at iba pa) on my way back. Great idea.
Ting-Aling: Hello! Yeah, I noticed that you added something new to your site. Nice! Obvious ba ang hilig kong kumain...hehehe It is always nice to come home during special occassions so I'm sure you are looking forward to your trip next year. Bohol is great. I've been there the last 2 years and I noticed last January there were a lot of new developments na. Very good sites for diving and snorkeling--definitely a lot better than Boracay. Don't miss the dolphin watching and the tarsiers as well, your kids will love it. HAPPY THANKSGIVING! I can smell the turkey ;-)
